I have attached a part of the STM32F4 with KSZ8031 design. The prototypes work with the FreeRTOS lwIP demo, no further tests were done.

SPI transmission at regular intervals
What's the most efficient way to start an SPI transmission at regular intervals, say 10000 3x8bit transactions per second at 1Mbit? Are virtualTimers suitable for this, or are better solutions available?

The Nokia6610 display uses a 9bit SPI interface, STM32F series only supports 8/16bit transfers. An often overlooked alternative is 9bit USART mode, which we used in our design with a Nokia6610 display.
