Let me introduce my own time waster - I am trying to develop my own automotive engine control module. I've wanted to learn something new for some time now, so ten months ago I've ordered a soldering iron and a discovery board.
As of today, my test vehicle can go around the block. The software side of things is easy for me, I am mostly struggling with the analog side of the physical world, but I am not giving up yet.

The day I see something like 7" SPI driven screen under $50, I order it. Parallel ports are just too parallel for me

How comes? What's exactly your problem with a parallel interface? It's really no big issue to set it up and get it running (beside the wiring
). When you get the free pins, you can hook it up to the FSMC interface of your F4 discovery board, then it's really just a few lines of code to set the FSMC peripheral up.
Also, there are pretty good reasons why there are no 7" LCDs with an SPI interface
